Hob Nob's

After Mini Monster excitedly spotted a pack of (previously allowed) Hob Nob's, I decided it was time to have a go at home. Armed with several similar looking recipes on the internet, I just substituted the self raising flour for a wheat free flour mix for a very successful first attempt. Just be warmed though, this quantity makes LOTS of biscuits. The mix will keep well in the fridge for up to 3 days for another fresh batch, or just make half quantity. 


8oz/225g self raising flour (or wheat free flour mix)*
8oz/225g sugar 
8oz/225g porridge oats
8oz/225g Dairy and Soya free spread
1 tbsp golden syrup or honey
1 tbsp water
1/2 tsp bicarbonate of soda

Mix the dry ingredients together
Melt Spread, syrup and water very gently, let it cool slightly
Pour onto dry ingredients and mix well. 


Form into balls the size of walnuts. 



Put on a greased tray and flatten.


Bake at 180 or gas 4 for 15 mins. 
Leave on a tray a minute then put to cool on a rack.


*Flour mix: I made these a couple of times with Bob's Red Mill All Purpose Flour Mix, plus 1tsp baking powder. Worked really well and have been requested again at work! I tried at the weekend with Dove's Farm White Bread Flour, but the mix seemed much greasier and cooked biscuits were still chewy - would probably have dried out in the oven a bit longer, but I was too impatient. I think biscuit mixes with melted fat rather than beaten needs a more absorbent mix. I've now run out of Bob's so will try next time with Oat Flour, or adding Gram Flour to the Dove's Farm mix and keep you posted.
